Ingredients
Scale
Ingredients
- 1 pound sausage (such as Jimmy Dean)
- 1 (10-oz) can Rotel diced tomatoes and green chilies, undrained
- 1 (8-oz) package cream cheese, cut into pieces
Instructions
- Cook the Sausage: In a large skillet over medium-high heat, cook the sausage until it is crumbled and no longer pink. This usually takes about 7-8 minutes. Once cooked, drain any excess grease from the skillet to ensure the dip isn’t oily.
- Add Tomatoes and Cream Cheese: Reduce the heat to medium-low, then add the entire can of undrained Rotel diced tomatoes and green chilies along with the cut pieces of cream cheese to the skillet. Stir continuously until the cream cheese melts completely and the mixture is creamy and well combined, about 2-3 minutes.
- Serve Warm: Transfer the dip to a serving bowl or keep it warm in the skillet and serve immediately with tortilla chips for dipping. This dip is best enjoyed hot to maintain its creamy texture.
Notes
- You can use any spicy or mild sausage depending on your flavor preference; Italian sausage works well too.
- For a thicker dip, use full-fat cream cheese.
- If you prefer extra heat, add a dash of hot sauce or extra diced jalapeños.
- This dip can be kept warm on low heat or reheated gently to maintain its creamy texture.
- Leftovers can be refrigerated and reheated in the microwave or stovetop.
