Description

Delight in these festive Chocolate-Dipped Easter Rice Krispie Treats, combining crispy, gooey marshmallows with crunchy Rice Krispies cereal. Each treat is dipped in rich dark and creamy white chocolate, then decorated with colorful sprinkles, perfect for Easter celebrations or anytime you want a sweet, crunchy snack.

Ingredients

Scale

Main Ingredients

  • 8 tablespoons butter
  • 16 cups mini marshmallows (divided into 12 cups and 4 cups)
  • 10 cups Rice Krispies cereal
  • ½ teaspoon salt

Chocolate and Toppings

  • 6 ounces high-quality dark chocolate
  • 6 ounces high-quality white chocolate
  • Sprinkles (optional)

Instructions

  1. Prepare the pan: Line a 9×13-inch pan with foil and lightly grease it with cooking spray to prevent sticking.
  2. Melt butter and marshmallows: In a large pot over low heat, melt the butter. Add 12 cups of mini marshmallows and stir continuously until they are completely melted and smooth.
  3. Add cereal and remaining marshmallows: Remove the pot from heat. Stir in the salt and Rice Krispies cereal until evenly coated. Then add the remaining 4 cups of marshmallows and mix thoroughly until combined.
  4. Form the treats: Transfer the mixture to the prepared pan. Use parchment paper sprayed with non-stick spray to press the mixture evenly into the pan. Allow the treats to cool completely.
  5. Cut into squares: Once cooled, cut the treats into 20 to 24 evenly sized squares for serving.
  6. Set up double boiler and melt chocolates: Bring about 1 inch of water to a simmer in two separate pots. Place a heat-safe bowl over each pot. Melt the dark chocolate in one bowl and the white chocolate in the other, stirring frequently until smooth and fully melted.
  7. Dip the treats in chocolate: Dip each Rice Krispie square halfway into the melted chocolate, allowing any excess to drip off. Insert a popsicle stick into each treat and decorate with festive sprinkles if desired.
  8. Let chocolate set: Allow the chocolate coating to fully set and harden before serving. This will ensure that the chocolate doesn’t smudge and the treats are easy to handle.

Notes

  • Use parchment paper sprayed with non-stick spray to press the mixture easily without sticking.
  • High-quality chocolate makes a big difference in flavor and texture for dipping.
  • For quicker chocolate setting, place the dipped treats in the refrigerator for about 15–20 minutes.
  • Store treats in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
  • You can customize sprinkles or omit them based on preferences or dietary restrictions.
