Ingredients
Scale
Soup Base
- 1 tablespoon vegetable oil
- 1 pound ground pork (can substitute with ground turkey or chicken)
- 1 small onion, diced
- 3 cloves garlic, minced
- 2 teaspoons fresh ginger, grated
- 4 cups chicken broth
Vegetables
- 4 cups coleslaw mix (green cabbage, carrots, red cabbage)
Seasonings
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon rice vinegar
- 1/2 teaspoon red pepper flakes (optional, for heat)
- Salt and pepper, to taste
Garnishes
- 2 green onions, sliced
- Sesame seeds (optional)
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- Heat Oil and Brown Pork: In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the ground pork, breaking it apart with a wooden spoon, and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Sauté Aromatics: Add diced onion, minced garlic, and grated ginger to the pot. Stir and cook for 2-3 minutes, until the onions are translucent and fragrant.
- Add Broth and Deglaze: Pour in the chicken broth, scraping the bottom of the pot to deglaze and incorporate any flavorful bits stuck to the bottom.
- Add Vegetables: Stir in the coleslaw mix, making sure the vegetables are fully submerged in the broth.
- Season the Soup: Add soy sauce, sesame oil, rice vinegar, and red pepper flakes if using. Mix well to combine all ingredients.
- Simmer: Bring the soup to a simmer over medium-high heat. Once simmering, reduce heat to low and let it cook for 10-15 minutes, allowing the flavors to meld and vegetables to soften.
- Adjust Seasoning: Taste the soup and add salt and pepper as needed for final seasoning.
- Serve and Garnish: Serve the soup hot, garnished with sliced green onions, sesame seeds, and chopped cilantro if desired.
Notes
- You can substitute ground pork with ground turkey or chicken for a leaner option.
- Red pepper flakes are optional and can be adjusted according to your heat preference.
- If you prefer a thicker soup, you can add a slurry of cornstarch and water in step 6 and cook until thickened.
- Use low-sodium chicken broth to better control the salt content.
- Garnishes like cilantro and sesame seeds add extra flavor but can be omitted if not preferred.
