Instructions
- Cook the Pasta: Cook the pasta according to package instructions until al dente, then drain well and set aside.
- Sauté the Vegetables: Heat olive oil in a pan over medium heat. Add the sliced mushrooms and cook until they soften and release their moisture, about 4-5 minutes.
- Add Spinach: Add the fresh spinach to the pan and cook until wilted, which should take about 2-3 minutes.
- Prepare the Sauce: Stir in the heavy cream, garlic powder, grated Parmesan cheese, salt, and pepper. Cook the mixture for 2-3 minutes, stirring frequently, until the sauce thickens slightly.
- Combine: Add the cooked pasta back into the pan and toss thoroughly to coat the pasta evenly in the creamy sauce. Serve immediately while warm.
