Dry Ingredients
- 1 cup rolled oats
- 2 tablespoons chia seeds or flaxseeds
- 1 tablespoon protein powder or hemp seeds
- 1-2 teaspoons spices (cinnamon, nutmeg, or pumpkin spice)
- 1 teaspoon superfood powders (matcha, maca, or spirulina)
- 1/4 cup mini dark chocolate chips
- 1/4 cup dried fruits (chopped apricots, cranberries, or raisins)
- 1/4 cup nuts (chopped almonds, walnuts, or pecans)
Wet Ingredients
- 1/2 cup nut butter (peanut, almond, or sunflower seed butter)
- 1/3 cup honey or maple syrup
- 1 teaspoon vanilla extract
Instructions
- Combine Dry Ingredients: In a large mixing bowl, stir together the rolled oats, chia seeds or flaxseeds, protein powder or hemp seeds, spices, superfood powders, mini dark chocolate chips, dried fruits, and nuts until thoroughly mixed.
- Add Wet Ingredients: Add the nut butter, honey or maple syrup, and vanilla extract to the dry ingredients. If necessary, warm the nut butter slightly to make it easier to stir.
- Mix Until Combined: Use a spatula or clean hands to blend all the ingredients evenly, ensuring the mixture is sticky enough to hold its shape but not too wet.
- Form the Bites: Scoop out small portions with a spoon and roll them between your palms to form bite-sized balls approximately one inch in diameter.
- Chill and Set: Place the energy bites on a lined tray and refrigerate them for at least 30 minutes to firm up before serving.
