Ingredients
Scale
Pie Filling
- ¾ cup sugar
- ½ cup Bisquick
- 2 Tbsp melted butter
- 1 (12-oz) can evaporated milk
- 2 large eggs
- 1 (15-oz) can pumpkin puree
- 2½ tsp pumpkin pie spice
- 2 tsp vanilla extract
Instructions
- Preheat and Prepare: Preheat your oven to 350ºF (175ºC). Lightly grease or spray a 9-inch pie plate with cooking spray to prevent sticking.
- Mix Ingredients: In a large mixing bowl, combine sugar, Bisquick, melted butter, evaporated milk, eggs, pumpkin puree, pumpkin pie spice, and vanilla extract. Using an electric mixer, blend all the ingredients until the mixture is smooth and uniform in texture.
- Pour Filling: Pour the prepared pumpkin pie filling evenly into the greased pie plate, spreading it out gently if needed.
- Bake: Place the pie in the preheated oven and bake for 50 to 55 minutes. The pie is done when the center is set and no longer jiggly. A toothpick inserted near the center should come out clean or with a few moist crumbs.
- Cool and Serve: Remove the pie from the oven and cool completely on a wire rack. Once cooled, refrigerate the pie until ready to serve. Optionally, top with whipped cream or Cool Whip and dust with ground cinnamon for added flavor.
Notes
- Ensure the eggs are well incorporated to avoid lumps in the pie filling.
- Use pumpkin puree, not pumpkin pie filling, to control sugar and spice levels.
- Allow the pie to cool fully to properly set before refrigerating or slicing.
- For a dairy-free version, substitute evaporated milk and butter with plant-based alternatives.
- Store leftover pie covered in the refrigerator and consume within 3-4 days for optimal freshness.
