Instructions

  1. Prepare the crust: In a medium bowl, combine almond flour, shredded coconut, 2 tablespoons erythritol, and 1/4 teaspoon ground cinnamon. Stir in melted butter until the mixture resembles wet sand.
  2. Form the crust: Press the crust mixture firmly and evenly into the bottom of a lined 8×8 inch pan. Place in the refrigerator to set while preparing the filling.
  3. Make the filling: In a large mixing bowl, beat softened cream cheese until smooth. Add heavy cream, powdered erythritol, and vanilla extract, then beat until creamy and well combined.
