Description
A delightful side dish featuring baby potatoes roasted to crispy golden perfection and coated in a savory garlic butter and Parmesan cheese mixture, enhanced with fragrant herbs and fresh parsley garnish.
Ingredients
Scale
Potatoes
- 2 lbs baby potatoes, halved
Garlic Butter Mixture
- 4 tablespoons unsalted butter, melted
- 4 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
Cheese & Garnish
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven: Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking.
- Make the garlic butter mixture: In a large bowl, combine melted unsalted butter, minced garlic, olive oil, dried thyme, dried oregano, salt, and pepper. Mix well to create a flavorful coating.
- Coat the potatoes: Add the halved baby potatoes to the bowl and toss thoroughly so each piece is evenly coated with the garlic butter and herb mixture.
- Arrange for roasting: Spread the coated potatoes in a single layer on the prepared baking sheet with the cut side facing down; this helps achieve extra crispy edges.
- Roast the potatoes: Place the baking sheet in the preheated oven and roast the potatoes for 25-30 minutes until they turn golden brown and develop crispy edges.
- Add Parmesan cheese: Remove the potatoes from the oven and immediately sprinkle the grated Parmesan evenly over them. Toss gently to combine the cheese while the potatoes are still hot.
- Garnish and serve: Finally, garnish the roasted potatoes with freshly chopped parsley to add a fresh burst of color and flavor before serving.
Notes
- For extra crispiness, ensure potatoes are spread out and not crowded on the baking sheet.
- You can substitute baby potatoes with fingerling potatoes if desired.
- Use freshly minced garlic for the best flavor.
- Adjust seasoning with salt and pepper according to taste.
- Parmesan cheese can be replaced with Pecorino Romano for a slightly stronger flavor.
- If you prefer, add a pinch of chili flakes for a bit of heat.
