  • 2 bay leaves
  • 1 tablespoon brown sugar (optional)

  • 1 tablespoon cooking oil
  • 2 green onions, chopped (for garnish)

Instructions

  1. Sear the Chicken: Heat oil in a pan over medium heat and lightly sear the chicken thighs or drumsticks for 2-3 minutes per side until browned. This step enhances flavor but can be skipped for convenience.
  2. Transfer to Slow Cooker: Place the browned (or raw) chicken into the slow cooker.
  3. Prepare the Sauce: In a bowl, whisk together soy sauce, white vinegar, water, minced garlic, black peppercorns, optional brown sugar, and paprika. Pour this mixture over the chicken in the slow cooker.
  4. Add Aromatics: Add the sliced onion and bay leaves on top of the chicken and sauce.
  5. Cook Slowly: Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and easily pulls apart.
