Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat, then add the taco seasoning mix and water. Simmer the mixture for 2 to 3 minutes to develop flavor.
  3. Prepare the Filling: Stir in the black beans, corn, diced tomatoes, and salsa into the seasoned beef mixture. Mix well and let it simmer for another 2 to 3 minutes so all flavors combine.
  4. Assemble the Casserole: Grease a 9×13-inch baking dish. Begin layering with tortilla pieces on the bottom, then spread half of the beef and vegetable mixture over them. Sprinkle 1 cup of shredded cheese on top. Repeat this layering process with remaining tortillas, beef mixture, and cheese.
