Meat Mixture

  • 1 pound ground beef or turkey
  • 1 small onion, diced

  • 1 packet taco seasoning or 2 tablespoons homemade taco seasoning
  • 1/4 cup water

  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes

  • 1/4 cup chopped green onions

Instructions

  1. Prepare and roast potatoes: Preheat the oven to 400°F and lightly grease a baking sheet. Toss the potato cubes with olive oil, salt, and pepper, then spread them evenly on the baking sheet. Roast for 25–30 minutes, flipping halfway through, until the potatoes are golden and tender.
  2. Cook the meat and aromatics: While the potatoes roast, heat a skillet over medium heat. Cook the diced onion and minced garlic for 2–3 minutes until softened. Add the ground beef or turkey and cook, stirring and breaking apart the meat until browned.
  3. Season the meat: Stir in the taco seasoning and 1/4 cup water. Reduce the heat and simmer the mixture until the sauce thickens, about 3–5 minutes.
  4. Combine and bake: Once the potatoes are roasted, transfer them to a large baking dish. Mix in the seasoned meat evenly. Sprinkle the shredded cheddar cheese over the top and bake in the oven for an additional 5–7 minutes until the cheese melts and bubbles.
  5. Add fresh toppings and serve: Remove the casserole from the oven. Top with diced tomatoes, sliced black olives, and chopped green onions. Serve warm with sour cream and salsa on the side.
