- Prepare Chocolate Mixture: Place the white chocolate chips in a heat-safe bowl. Add the lemon extract and yellow food coloring if using. Set this mixture aside to be combined later.
- Heat Butter and Cream: In a saucepan, melt the unsalted butter over low heat along with the zest of one lemon to infuse the flavor. Then increase the heat to medium, add the heavy whipping cream, and cook the mixture until it just begins to simmer. Remove the pan from heat immediately to prevent burning.
- Combine Ingredients: Pour the hot cream and butter mixture over the white chocolate chips. Allow it to sit for a few seconds to soften the chocolate, then stir gently but thoroughly until the mixture is smooth and fully melted.
- Chill the Mixture: Cover the bowl and place it in the refrigerator for about 1 hour, or until the mixture is firm enough to scoop and handle.
- Shape the Truffles: Once chilled, scoop small portions of the firm mixture and roll them into balls. If the mixture is sticky, dust your hands with powdered sugar to make rolling easier.
- Coat the Truffles: Roll each truffle evenly in powdered sugar to create a delicate outer coating.
